Tarte Tatin is a pastry dish in which the fruit (typically apples) is caramelized in butter and sugar before the tart is baked. It was created and named after the Tatin sisters who had created the dish by mistake. Tarte Tatin can be made with peaches, pineapples, pears and other fruits. The dish should be created with puff or shortcrust pastry.

Ingredients!

1 cup of sugar

2 tablespoon butter

6 apples peeled, halved and cored

400g (14oz) puff pastry thawed (rolled out if necessary) and trimmed to fit the pan

How to make Tarte Tatin

1) Scatter the sugar evenly into an ovenproof pan.

2) Place over medium heat and allow to melt.

3) Once the edges of the sugar has turned to liquid, you can gently start stirring the sugar, letting it melt and caramelize.

4) The caramel is ready once it turns amber in color. Add the butter and carefully stir until combined.

5) Once the caramel is ready, add the apples and allow to cook for 2-3 minutes per side.

6) Remove the apples from the heat and allow to cool for a few minutes.

7) Carefully top with puff pastry then place in a preheated oven. Allow to bake for 20-25 minutes until pastry is golden and puffed.

8) Carefully remove the pan from the oven and allow to cool for 3-5 minutes. Place a large plate, serving platter or board over the top and carefully but swiftly flip the pan over.
