Blini

 

A pancake you'd love to eat, Blini is Russian crêpes ( crêpe is a very thin pancake) These blini are sure to awaken your taste buds as it can be either sweet or savoury and can be served either hot or cold. As long as you love pancakes, you're going to love blini!

Blini is a Russian pancake traditionally made from wheat (sometimes buckwheat) and served with smetana (sour cream), tvorog (form of cheese), curd, butter, caviar and other garnishes for savory dishes and garnishes like jam and honey for sweet dishes. Blini is one of the most popular and most eaten dishes in Russia.


Ingredients!


4 medium eggs

1 cup whole milk, room temperature

1/2 teaspoon salt

1/2 tablespoon granulated sugar

1 cup all purpose flour

4 tablespoons unsalted butter divided, for pan


Instructions!


1) In a medium bowl, whisk together the eggs and milk. Whisk in the salt, sugar, and flour until well combined and no lumps remain. Set batter aside to rest for 15 minutes. Whisk once more before cooking.

2) Warm up a non stick 10 inch pan over medium heat. Melt about 1 teaspoon of butter. When it starts to foam, ladle in 1/4 cup of batter in the center of the pan.

3) Immediately lift the pan from the burner and swirl it so the batter is just set and the underside is lightly golden, about 1 minute.

4) Using a spatula or your fingers loosen the sides of the crêpe and gently flip in the pan. Cook for another 45 seconds.

5) Transfer crêpes to a plate. Repeat until all batter is gone.

6) Roll up or fold into quarters.

7) Serve immediately with a few teaspoons of jam or honey and fresh berries for the sweet dish.
