Pierogi
Another version of Russian dumplings, Pierogi is a small dough dumpling stuffed with a filling such as potato or cheese, typically served as a dish with onions or sour cream. It is a delicious treat that has taken the world by storm!
The origin of these delicious pastries are still under debate ( either from Europe or Polish) but many countries from around the world cherish this dish and Russia is one of those countries! This is the reason why Pierogi is part of the Top Ten Popular Foods in Russia!
Pierogi are filled dumplings made by wrapping unleavened dough around a savory or sweet filling and cooking in boiled water. They are often pan fried before serving. Typical fillings include potato, cheese, quark, sauerkraut, ground meat, edible mushrooms and/or fruits. Savory pierogi are often served with a topping of sour cream, fried onions or both.
Ingredients!
Dough:
2 to 2 1/2 cups of all purpose flour
1 large egg
1 tablespoon of salt
1/2 to 1 cup of water
Filling:
3 large potatoes
1 cup of cottage cheese
1 medium onion; diced and sauteed in butter until clear
3 slices of bacon; diced and fried until crispy
1 egg yolk
1 tablespoon of butter melted
1/4 tablespoon of salt
A pinch of pepper to taste.
How to Make Scrumptious Pierogi!
Instructions!
1) Combine all ingredients for the filling and put it into a bowl. Cover and set aside in the fridge until ready to use.
2) Place two cups of flour in large bowl on a work surface and make a well in the center. Break the eggs in it, add the sault and a little lukewarm water at a time. Bring the dough together and knead well and add more flour or water as needed. Cover the dough with a soft towel. Note that you are aiming for soft dough. Let it rest for 20 minutes.
3) On a floured surface, roll the dough out thinly by 1/8 inch. Cut with a two inch round glass. Spoon a portion of the filling onto the middle of each dough circle. Fold the dough in half and pinch edges together. Gather scrap and reroll and fill.
4) Bring a large saucepan of salted water to a boil. Drop in the pierogi on the pan. Remember not to overfill the pan. Return the water to a boil and reduce heat. When the pierogi rises to the surface. Let it simmer for a few more minutes.
5) Use a slotted spoon and taste the pierogi. If it is ready, remove the remaining pierogi from the water.
6) You can serve immediately or choose to fry it.
