Flamiche Picarde

 

A pastry tart made with leeks and cream, Flamiche Picarde is a pastry dish that would make a crowd of people begging for more! It is so unique and filled with a bunch of the healthy stuff. It's like a pizza pie, but filled with leeks and the crust of the pie covers the leeks entirely. This traditional and unique dish is just the reason why this pie is sixth on the Top Ten Popular Foods in France!

Also known as leek pie, Flamiche Picarde is a specialty of Picardy in Northern France which is basically a puff pastry tart made of leeks and cream. This tasty dish is typically taken with either a salad or red wine. 

Ingredients!

3 large leeks - about 500g

2 eggs

100ml full fat cream

100ml full fat milk

1 pinch of powdered nutmeg

Some butter

Salt and pepper seasonings

1 sheet of puff pastry


How to make Flamiche Picarde


1) Wash the leeks thoroughly,  then slice into not too thick chunks. Heat up a dollop of butter in a large pan and add in the sliced leeks. It's not necessary for the leeks to be browned, so make sure not to turn the heat up too much.

2) Cook until pretty much all of the moisture has disappeared from the pan, then the leeks will be nice and reasonably soft. Meanwhile, preheat the oven to a temperature of 200°C (390°F). Grease the round cake tin with butter. 

3) Cover the greased up cake tin with puff pastry and poke holes in the bottom using a fork. Mix eggs with milk and creaming a medium sized bowl using a whisk. Seasoned with grounded pepper, salt and a pinch of nutmeg. 

4) Divide the soft leeks over the puff pastry and pour over the egg-cream mixture. Bake in the oven until golden-brown in about 20-25 minutes time.
