Salade Niçoise

 

A legendary salad brought from the city of Nice, Salade Niçoise is a unique salad that everyone cherishes. A unique blend of vegetables that will treat your taste buds well, this Salade is respected across the world. Salade Niçoise is a salad that is originated in the French city of Nice. It is traditionally made of tomatoes, Niçoise olives, hard-boiled eggs and anchovies or tuna, dressed with olive oil. It can be served either as a composed salad or as a tossed salad. 


Ingredients!

500g small potatoes, boiled and chopped 

225g green beans, lightly boiled

200g can tuna flaked

12 cherry tomatoes cut in half

4 eggs, boiled for 10 minutes, peeled and cooled. 

A handful of black olives

4 anchovy fillets cut in half lengthways

Mixed leaves or lettuce


Dressing! 

3 tablespoons of olive oil or rapeseed oil

1 tablespoon of wine vinegar 

1 tablespoon of dijon style mustard 

Salt and pepper

2 tablespoons of mayonnaise 

1 tablespoon of basil, finely chopped 


How to make Salade Niçoise 


1) Mix the oil, vinegar, mustard and seasoning together.

2) To assemble the salad, place the potatoes, green beans, tuna, tomatoes and leaves in a large bowl, mix with half the dressing, divide between four plates. 

3) Cut the eggs in four and add to each plate. Divide the black olives between each plate.

4) Mix the remaining dressing with the mayonnaise and the basil. Drizzle the dressing over each plate and top with the anchovy strips. It is very good with crusty bread.
