Beef Stroganoff


 A heartwarming sauce that can fill anyone to the brim, Beef Stroganoff is a meat sauce dish that is typically used to accompany other dishes such as rice, noodles, mashed potatoes and more. The uniqueness of the dish comes to the use of smetana (sour cream) and the ability of the dish to be frozen. Beef Stroganoff is a dish of Russian origin. It requires sautéed pieces of beef served in a sauce with smetana (sour cream). The beef can either be diced, cubed or cut into strips. There are many variations of the dish either by replacing the beef with another type of meat such as chicken, sausage and shrimp or by adding sauce to the sour cream. In other parts of the world, beef stroganoff is typically put with rice, noodles or mashed potatoes.


Ingredients!

1.5 pound of chuck or sirloin steak, sliced very thin.

2 teaspoons of salt

2 pounds of white button or cremini mushrooms, sliced

2 tablespoons of olive oil

1 large yellow onion, diced

2 cloves garlic, minced

4 tablespoons of unsalted butter

1/4 cup of flour

2 cups beef broth

2 tablespoons of fresh thyme

1 tablespoon of Worcestershire sauce

1 tablespoon of Dijon mustard

1/2 cup of full fat sour cream

1/2 teaspoon of pepper

(Optional) Parsley, finely chopped


How to make Beef Stroganoff

Instructions!

1) Slice the steak against the grain into 1/4 inch thick strips, discarding any excess fat and sprinkle with 1 1/2  teaspoon of salt.

2) In a large skillet heat 1 tablespoon of olive oil in high heat. Working in small batches cook the meat around. It should be a nice brown sear, about 1-2 minutes. Flip the beef and continue cooking until both sides are nice and browned. Remove from pan and repeat with remaining meat. Once finished, set the meat aside. Also note that you can add more olive oil to the pan if it gets too dry.

3) In the same pan add the butter. Once melted, add the onions and mushrooms and cook until the onions soften and the mushrooms have released all of their liquid and start to brown, about 5 minutes. Add garlic and sauté for 1 more minute.

4) Add the flour to the onion mushroom mixture stirring for 1 minute. Slowly add the beef broth, a little at a time and stir until fully incorporated. Add the thyme, salt and pepper and simmer, stirring often, until it begins to thicken, about 5 minutes. Add the Worcestershire sauce, sour cream and dijon mustard, stirring until the sauce is combined. Being the sauce to a gentle simmer and allow to cook until the sauce thickens. Add meat back into the sauce along with fresh parsley and serve with noodles or mashed potatoes or any other dish you wish to add to it!
